Jennifer Ernst, MSCN, PN1 began her plant-based journey at 10 when her grandfather suffered a heart attack and forced the family to adopt more healthful eating habits – becoming plant-based without knowing it yet!
Most of their meals consisted of produce grown on-site: “We lived on a farm and grew vegetables ourselves, though with chickens and cows as well.
As Ernst aged and moved further away from the farm, she became dissatisfied purchasing meat not from within its vicinity.
She wasn’t opposed to eating meat overall, but without knowing its source and methods of production it didn’t sit right with her.
Scott Burgett, CSCS and PN1 was inspired to go 100% plant-based while watching a Netflix documentary.
He had been gradually transitioning to a plant-based lifestyle over several years, taking small steps toward this transition.
After seeing a documentary showing the tragic fate of male baby chicks in the egg industry (they are typically killed at one day old because they cannot lay eggs), he decided it was time to switch over to a plant-based diet.
Ernst and Burgett have become successful plant-based nutrition coaches. Their stories highlight pivotal moments when their values became impossible to ignore; that led them on the journey that has brought them here today.
